Do you guys think  {Stormbreath Dragon} will go up or stay as it is? Or maybe even go down from here? I want to know if I should sell the two I just got now so I can buy a booster box or if I should hold on to them in case they go up.

it really all depends on two things:

1- whether or not there is a red 4-7 drop bomb in the next few sets
2- will America control remain to be played or will it be overshadowed by Esper?

It's not an america control card, it's used in R/G monsters, naya midrange, jund, etc. etc.

30-40 feels fine for this card for a while. It's a powerful dragon that is in demand. Thundermaw didn't drop until it was obvious he wasn't being reprinted.

The reason I am saying America control is because there are a lot of people who have America control decks already put together from prerotation and they are looking to fill in what they are missing, one of the key spots to fill is Thundermaw and Stormbreath is the only decent fit.
